2 cups organic quinoa
4 cups water
1 onion, finely chopped
½ tsp olive oil
½ cup frozen or fresh green peas
2 medium zucchini sliced
1 small bunch broccoli
5 tbsp fresh parsley chopped
5 cloves garlic, minced
½ tsp oregano
1 tsp fresh basil, chopped finely
1. Bring quinoa, water and salt to a boil.
2. Reduce to low and simmer 20 minutes or until water evaporates.
3. Let stand covered for an additional 10 minutes. Do not open lid.
4. In large skillet, heat olive oil over medium heat.
5. Add onion and sauté for 5 minutes or until soft.
6. Add garlic; stir until heated through.
7. Add broccoli, zucchini, and green peas, cook 10 minutes.
8. Stir in parsley and cook for additional 10 minutes.
9. Transfer quinoa into vegetable mixture.
10. Sprinkle with oregano and fresh basil.
11. Stir and serve.
